1 x packet small naan bread
2 tablespoon extra-virgin olive oil
1 clove of garlic, smashed
2 tablespoons of freshly chopped parsley and thyme
1/2 cup whole eggs mayo
1 teaspoon Shichimi togarashi - available in Asian section of good supermarket
Mix all ingredients together and store in plastic squeeze bottle.
2 eggs, pan-fried sunny side up
Fresh herbs- oregano, thyme, basil, parsley.
Rub each piece of naan bread with the smashed garlic and brush with extra virgin olive oil.
Light pan fry on medium heat to warm through. Sprinkle with chopped herbs.
Place warm pancakes on serving plate and top with fried eggs.
Drizzle mayo over eggs and garnish with fresh herbs.
Season with salt and pepper.
